Static 2.0
Static 2.0 is definitely one of the best Windows 7 themes I have seen. I really like how the creator used in this theme, in a nice and still atention catching way.
Static Polished
As name says, takes care of corners and borders, completeley polished.
Metalik Glass for Windows 7
Another very good aero desktop theme, changes windows 7 default caption buttons and has an awesome glow when you hover over captions and close or minimize, it also modifies all of the windows icons.
Leaf Visual Style for Windows 7
A theme focused on nature.

7Clean is a pretty decent Windows 7 theme with a greyish light interface and cool icons:

Blend 2.0 Light Aero Theme for Windows 7
Another light Aero theme with a transparent shell with some decent new buttons inspired by the IE9 and Firefox 4 browser buttons:
